This weekend, Mother Nature decided to give us all four seasons here in Dallas. On Saturday, it was sunny and warm and we had the back door open as the dogs ran in and out playing. Yesterday, it started sleeting, and thunder racked the skies. This morning, we awoke to iced roads and white covered grounds.
I am *so* ready for this winter weather to be gone. So I’m dreaming of rainbows and sunshine today. These Rainbow Marshmallow Pops are easy to make, and are guaranteed to brighten your day. Plus, they’d make a fun treat for St. Patrick’s Day later this month!
Easy Rainbow Marshmallow Pops
Jumbo Jet-Puffed Marshmallows
Mini Jet-Puffed Marshmallows
Blue Candy Melts
Place a Jumbo marshmallow on a stick horizontally for each marshmallow pop you are going to make. Melt the blue candy melts according to package directions.
Dip the Jumbo marshmallow in the blue candy melts until fully coated. Set upright in a styrofoam block to allow to harden completely.
Meanwhile, separate the mini M&Ms by color — you won’t be needing the brown ones, so feel free to snack while you’re working.
Take the mini marshmallows and cut them in half across their width. You’ll need two halves (one mini marshmallow) per pop.
Using a toothpick, add a dab of blue candy melts to the back of a mini M&M and place it on the marshmallow pop.
Repeat with remaining colorings in semi-circle, making a rainbow pattern. Add the two marshmallow halves just below the ends of the rainbow to make clouds.
Eat them straight off the stick, or package in treat bags tied with curling ribbon for a fun party favor.
